Denflo

the sapling

The roots of the young sapling pierce the forest floor. No destination in mind. No hurry. No desire for anything other than the blooming small flowers and fluttering glowing insects.

A gentle green tea grounded with cacao pieces and lifted by rose petals. Soft, unhurried, quietly sweet.

Field notes

How to brew the sapling.

i. In an infuser.

One heaped teaspoon per cup. Water just off the boil, around 80 degrees; a full boil scalds green tea. Steep two to three minutes.

ii. In the teapot.

A teaspoon per cup and one extra for the pot. Lid on, let it sit, pour the lot before it stews.

iii. Loose in the cup.

The unhurried way. Let the leaves settle as it cools and sip once the steam softens.

Afterwards, the leaves go to the garden, not the bin.
