Field notes

How to brew the night bird.

i. In an infuser.

One heaped teaspoon per cup. A full rolling boil; hibiscus and berries need the heat to open up. Steep five to six minutes.

ii. In the teapot.

A teaspoon per cup and one extra for the pot. Lid on, let it sit, pour the lot before it stews.

iii. Loose in the cup.

The unhurried way. Let the leaves settle as it cools and sip once the steam softens.

Afterwards, the leaves go to the garden, not the bin.
