Field notes

How to brew the lantern bearer.

i. In an infuser.

One heaped teaspoon per cup. Water just off the boil, around 80 degrees; a full boil scalds green tea. Steep two to three minutes.

ii. In the teapot.

A teaspoon per cup and one extra for the pot. Lid on, let it sit, pour the lot before it stews.

iii. Loose in the cup.

The unhurried way. Let the leaves settle as it cools and sip once the steam softens.

Afterwards, the leaves go to the garden, not the bin.
