Field notes

How to brew the carrier.

i. In an infuser.

One heaped teaspoon per cup. Water around 85 degrees, a touch under the boil, so the green half stays sweet. Steep three minutes.

ii. In the teapot.

A teaspoon per cup and one extra for the pot. Lid on, let it sit, pour the lot before it stews.

iii. Loose in the cup.

The unhurried way. Let the leaves settle as it cools and sip once the steam softens.

Afterwards, the leaves go to the garden, not the bin.
